Staying true to its name, the restaurant has been praised for its ecological awareness– presenting to its guests a ‘zero-kilometre’ cuisine which celebrates what Ibiza has to offer. While staying local, Molina also skillfully infuses his own worldly experiences into his dishes: La Gaia stands out for the Chef’s Nikkei cooking style, a unique fusion of Japanese and Peruvian elements that transforms this traditional Mediterranean food into a truly bespoke culinary masterpiece spanning 3 continents. With such an original menu, it is no surprise that La Gaia was awarded a Michelin star, making the Gran Hotel the first hotel on the island to be awarded such an accolade.
Food at the restaurant is organised into two tasting menus: the ten-course Tanit menu, and the fourteen-course Posidonia menu. The former features a triptych of dishes inspired by the traditional food eaten during the island’s matanza del cerdo festival in which every part of the family pig is consumed in a sumptuous feast: diners will enjoy a salty bone emulsion served on a chinese bun and a Mexican-style roasted black pork. Particular highlights from the Posidonia menu include red prawns with apple, pork jowl and hoisin, and Ibizan Flaó cake.
