The 55m/180’ Benetti charter yacht ALTITUDE took the crown for the 2013 Antigua Charter Shows prestigious annual ‘Concours de Chef’ award.
Held between the 6th and 12th December, the 2013 Chef’s Competition challenge was to create an exceptional dining experience in the theme of a ‘Plant-based haute cuisine Caribbean luncheon’. The competition is one of the focal points of the Antigua Charter Show each year and gives Chef’s and crew on board the attending yachts an opportunity to showcase their talents as well as highlight the culinary standards offered with a charter vacation.
ALTITUDE’s Chef, Anders Pedersen won the judges over with his creative five-course menu that offered a delicious fusion of local Caribbean ingredients in a fresh, healthy way using no animal products, animal derivatives or milk products.
Starting the meal off was a refreshing alcohol free cocktail with pink guava, papaya, green tea with a touch of mint & ginger beer soda followed by an amuse bouche of Butternut pumpkin, coconut, tamarind & chili cappuccino soup served with coriander foam. The starter came in the form of low carb Caribbean style maki sushi served with soy sauce, wasabi & beetroot pickle ginger which was complimented by a main course of vegetable ravioli tricolore filled with slow roast bell pepper & served with a rustic tomato, basil ratatouille & white almond foam. Last but not least was a beautiful desert of cashew panna cotta with passion fruit coulis served with fruit caviar, pineapple, mint foam & crispy almond tuiles.
